One thing that hasn't changed is my delicious breakfast (vegan, of course): oatmeal. Actually, it needs a fancier name. How about "Amanda's Deliciously Good Oatmeal?" Yep, I like that.
I have finally perfected the quickest, most delicious (and filling!) breakfast that I eat at least three times per week, so I'd like to share it with you! This is the perfect breakfast for busy people who need a healthy, delicious and quick breakfast. Here's how I make it.
First, make the oatmeal itself. You'll need...
- 1/3 cup of quick oats (any brand)
- 2/3 cup of water (more water for thinner oatmeal; less water for thicker oatmeal)
Stir the water and oats together, then heat in the microwave for 1 minute and 15 seconds. After that's done comes the fun part: toppings! Mix and mingle as you wish; however, the combo below is my personal favorite topping mixture.
- A small handful of raisins
- A dash of cinnamon
- 1 tbsp of milled chia seed
- 1 tsp of peanut butter
- 1 quick squirt of agave or maple syrup
- (Optional) For those of you with a sweet tooth, you may want to add a tiny dash of sweetener of your choice. I don't find that I need this, but you may want it.
