You may be wondering what sparked the sudden change. (Though, if you know me, I'm always trying something new and slightly different/strange.) I recently stumbled upon a few blogs, essays and documentaries promoting the Vegan lifestyle for a variety of reasons. Some people are vegans because of their strong passion for animal rights (most, I'd say). Some people are vegans because it's a good diet that produces weight loss. Some people are vegans because they find cutting out animal products has helped their bodies to feel healthier. I'd say my reasons for attempting this lifestyle change are some sort of combination of all three with emphasis on the last reason.
Here's what I ate on Vegan Day 1:
Breakfast: Coffee with non-dairy creamer. 1/2 cup oatmeal with raisins, cinnamon and peanut butter
Snack: Banana
Lunch: Salad with tomato, broccoli, chickpeas, red peppers and low fat balsamic dressing; Mixed fruit
Snack: A few figs and hot tea
Dinner: Broiled falafel on toast with vegan cheese (not my favorite); Fat free baked beans
Dessert: Vegan blueberry muffin
Not too shabby for day 1. I've been searching for Vegan recipes and blogs non stop on Pinterest and Google so that I can keep things interesting. Any suggestions of recipes or favorite blogs are welcomed! I will be sure to keep you all updated on this 30 day journey.
For now...On to day 2 of 30!
Sounds interesting! I dont know if you watch Ellen but last week they had this lady Kathy Freston on there and she has a book called The lean that is about going vegan in 30 days. I thought she was a little bit crazy in the way she talked about giving up cow's milk but it seemed like an interesting concept.
