Overnight, Slow Cooker, Apple Cinnamon Steel-Cut Oatmeal

If you know me, you know I love cooking meals that are easy and tasty.  That's why the invention of the slow cooker is perhaps the most meaningful day in history to me (I'm only slightly exaggerating).

I highly recommend making this delicious apple cinnamon steel-cut oatmeal if a) you swear by your crock pot, b) you want a breakfast item that is not only tasty, but filling and healthy, and c) you want your entire kitchen and surrounding areas to smell like apple cinnamon goodness.

Here are the ingredients I used to make this dish.  It varies slightly from the original version (which is equally delicious!).  I simply substituted ingredients for those I had in my pantry and for those that suited my taste.

  • 2 apples, peeled, cored, cut into 1/2-inch pieces

  • 1/3 cup raisins

  • 1.5 cups of soy milk

  • 1.5 cups of water

  • 1 cup uncooked steel-cut oats

  • 2 tablespoons brown sugar (can substitute 1 tablespoon of brown sugar with splenda or other sweetener)

  • 1.5 tablespoons butter

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 pinch of ground ginger
